5. Lemon Fudge:
Have you ever really thought of fudge as a snack? Homemade treats like these yummy lemony bars make awesome munch on! These are perfect little square of deliciousness when you are hungry between meals.
This lemon bar fudge recipe is a super choice for summer evenings. A lemony sweet quick snack or easy dessert idea when you are craving something sugary but simple.
Ingredients
- 1/2 c. butter
- 1/2 c. milk
- 2 small pkg. lemon pudding powder
- 1 lb. powdered sugar
- 2-3 teaspoons milk optional
Method:
Melt butter in a saucepan. Add milk and dry pudding powder. Cook over medium-medium high heat for 1 minute, stirring constantly. Remove from the heat. Stir in powdered sugar. Instead of stirring with a spoon, you can use an electric beater.
If fudge is too dry and firm you can add an additional teaspoon of milk, then mix again. Repeat until you get the consistency you want. Remember though, it will get firmer as it sets in the fridge. Press into prepared pan. Dust with powdered sugar, if desired. Refrigerate for a few hours.
4. Whole Wheat Pancakes:
5-minute wheat pancakes sound healthy, but taste amazing. They are made with healthy wheat flour. When it comes to making something awesome for breakfast but you don’t have much time, these yummy pancakes come to the aid!
Ingredients:
- 1 cup whole wheat flour
- 1 cup milk
- 3 large eggs
- 1/4 teaspoon salt
- 1 Tablespoon honey
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 cup oil
Method:
Add whole wheat flour and milk to a blender and blend on high for 3 minutes. Add remaining ingredients and blend until smooth. Cook on a hot greased pan for 1-2 minutes on each side or until golden brown.
3. Sweet Potato Chips:
This healthy snack idea is made with sweet potatoes, but tastes as good or better than store-bought potato chips. Learn how to make sweet potato chips for a snack at home in your microwave oven. Crunchy and light, with just the right amount of sweetness and salt.
Ingredient:
- 1 large sweet potato, scrubbed clean and any brown spots trimmed off
- 1 teaspoon extra virgin olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
Method:
slice the sweet potatoes using the thinnest blade. Put in a bowl and add oil, salt and pepper. Toss to coat. Cut out a piece of parchment paper in a circle to fit the tray in your microwave. Place sweet potatoes in a single layer on the tray.
Microwave on high power for 3.5 to 4 minutes or until crispy but not browned. Watch carefully for the first batch or two to determine the proper time since all microwaves are slightly different. Repeat this step until all chips are cooked. Best served immediately.
2. Frozen Yogurt Berry Bites:
To serve something healthy for the kids or for yourself, these yummy frozen yoghurt berry bites are a perfect choice. This richness full of fresh fruit, even the pickiest eaters will love these bite-sized snacks.
Ingredients:
- Sweet Yoghurt
- Berries of your Choice
Method:
Take a silicone ice tray. Add the berries of your choice or as a matter of fact any citric fruit like orange, Sweet lime or Pineapple, Kiwi would do. Top it with spoonfuls of sweet yoghurt and freeze it.
1. Restaurant Style Salsa:
Who else loves chips and salsa? We figured it as much… it’s such a classic snack! Everyone loves salsa when it’s fresh and smooth, with small pieces of tomato, onion, jalapeno, with cilantro and lime juice.
Ingredients:
- 2 cans (250 g each) Plum Whole Tomatoes
- 1 small red onion – cut into chunks
- 4 cloves garlic
- ½ (approx. 1 cup) bunch coriander – stems removed
- Juice from 1 large lime (about 2 tbsp)
- ¼ cup (60 g) canned Jalapeno (substitute with green chilli if unavailable)
- 1 ½ tsp ground cumin
- ½ tsp dried oregano
- 1 tsp sea salt
- 1 tbsp sugar
- Basil Leaves 4-5
Method:
Add all the above ingredients in a food processor or blender and pulse until smooth. If you like it chunkier, pulse a little lesser. Taste and adjust with more salt or lime juice if necessary. Serve immediately or store in air tight container for up to 3 days.
